I'm not doing a poll on this one just because there are so many to chose from.
Mine has to be Foose design just because Chip Foose's designs are sometimes really off-the-wall but they are always practical.. and beautiful at that

For Japanese cars, I'd have to go with Top Secret and Yashio Factory.
For European cars, I'd go with Gemballa and Racing Dynamics.

Nismo = insane performances

Nice topic, though in my case a very dificult one to answer. In my experience, I have found that most tuners that are above average tend to specialize in a specific brand. Even at that point many specialize on a few types of vehicles. I guess that depending on what type of vehicle you have and what you are trying to do with it, really defines who your ultimate choice would be.
That said, I love older cars, but with modern drive train modifications (which usually require a fair amount of vehicle specific fabrication).

Henessy and Hurst for new DaimlerChrysler prodcts
Nismo for Nissan and Infinity
Lingenfelter for GM
Mosler for crazy off the wall stuff
Spoon for Honda
Shelby/SVT/CDC for Fords

hmmm... I've always loved Rinspeed (euro cars I suppose), for Japanese cars I'd have to say all of "Evolution Inc." (they do some nice looking stuff, not much performanence-wise though) and for American cars It would probably be FOOSE Design....
There are loads of other great companies, these are just some of my favorites.
